The old-fashioned way to produce olive oil is to cold-press the olives and then separating the oil from water and letting it rise up to the top of the barrel. The Mahjoubs’ company which produces a high percentage of the olive oil produces their olive oil in this way. The old-fashioned way is not the fastest way to make olive oil but is the purest way. This is why the Mahjoubs of Tunisia make olive at the production percentage they do. Olive oil is considered gold in liquid form in Tunisia. Tunisia is one of the largest olive oil producers in the world and the biggest in the Mediterranean. Olive oil is a good, efficient way of making money. Olive oil employs about 300,000 people in Tunisia and gives some income in some way to one million people. About 70 million trees in Tunisia are trees that produce olive oil. Seventy percent of the olive oil made from those trees is exported out of Tunisia. Tunisia’s main niche is olive oil.

I think that even though the “old-fashioned way” of producing olive oil is not the fastest and best way to make money but is the purest way. I think that the purest way of producing olive oil will end up making the most profit. Also producing olive oil in Tunisia is a good employment type for the people and will help Tunisia reach the top.
